13-Minute Beef Burritos

1 pound hamburger browned and drained

2 cups white or brown rice cooked

2 cups diced tomatoes

1 cup diced tomatillos

½ cup green onions

2 cups shredded cheese (1 cup in mixture reserve 1 cup for top of rolled burritos)

¼ cup chopped cilantro

1 can black beans drained

1 cup sour cream

2 tablespoons Mexican seasoning ( e mail suzanne@chefsuzanne.com for low sodium alternative)

6 Burrito Flours

Brown 1 pound hamburger in a skillet and drain. Return hamburger to skillet and add cooked rice and remaining ingredients. Combine and cook for 5 minutes in skillet. Remove from skillet and place in burrito shell. Roll and top with remaining cheese. Warm in 350 oven for 5 minutes until cheese is melted.

Fresh Salsa

2 cups diced tomatoes

1 cup diced onions

1 cup diced tomatillos

1 cup corn

1 jalapeño seeded and diced

½ cup cilantro

Zest and juice of 2 limes

Salt and pepper to taste
