13-Minute Meals: Chicken and Cheese Quesadilla Pie

1 10 inch flour tortilla

3 cups shredded chicken (about 3 boneless skinless breasts)

½ cup chopped cilantro

1 cup diced red pepper

2 cups shredded cheese

2 large eggs

1 cup whole milk

Salt and pepper

1 cup all purpose flour

1 teaspoon baking powder

Preheat oven to 450. Grease a 9" pie plate.  Place tortilla into pie plate and spray lightly with cooking spray.  Combine chicken, cilantro, red pepper, 1 cup cheese, dash of salt and pepper in large bowl and spread filling over tortilla.  Wisk eggs, milk, four, baking powder and ½ teaspoon salt in bowl until smooth. Pour over filling and sprinkle with remaining cheese.  Bake 13-17 minutes until surface is golden brown.  Let rest 3-5 minutes and serve!
