Curried sweet potato salad - 13 WTHR Indianapolis

Curried sweet potato salad

  • 4 large sweet potatoes, cooked until just done
  • 1 ½ pounds Yukon gold potatoes, cooked until just done

*Do not overcook potatoes!!
**Chill potatoes overnight.   Peel and dice potatoes on the next day.

  • 1 large red onion, sliced thin
  • 2 teaspoons salt
  • 1 clove garlic, minced
  • 1 jalapeno pepper, seeded & minced
  • ¼ cup fresh lemon juice
  • 1 cup mayonnaise
  • 1 Tablespoon curry powder
  • ¼ fresh parsley, finely chopped
  • ¼ teaspoon white pepper

Mix all ingredients with potatoes.  Chill before serving.
