13-Minute Meals: Blueberry Salsa

INDIANAPOLIS -

Ingredients:

2 cups corn

4 medium tomatoes diced

2 small avocados peeled and diced

1 cup green bell pepper, diced

1 cup orange pepper, diced

½ cup chopped cilantro

Juice of 2 limes

2 tablespoons olive oil

1 tablespoon red wine vinegar

2 cups blueberries

 

Roast corn in oven for 5 minutes at 350.  Cool and combine all ingredients.  Serve with chicken, salmon or pork.
