USDA: Students eating more fruits and veggies

New government standards requiring schools to offer healthier meals have significantly boosted fruit and vegetable consumption without increasing waste.

The USDA mandate began two years ago. It requires schools to use more whole grains, reduce calories and provide more fruit and vegetables to students.

Harvard researchers found fruit selection in schools they monitored rose 23 percent; Vegetable consumption increased 16 percent.

While there was no additional food waste, students still threw away 40 to 75 percent of fruits and vegetables on their trays.
