13-Minute Meals: Shrimp and grits

GRITS

Cook instant grits according to package directions.

When grits are one minute away from being done add 1 cup shredded cheese (cheddar or jack) and ¼ cup parmesan cheese.

2 cups uncooked peeled shrimp (tail off)

2 cups diced Andouille sausage

1 teaspoon olive oil

½ cup diced onion

2 cups diced fire roasted tomatoes

3 gloves chopped garlic

¼ cup chopped parsley

1 teaspoon lemon juice

Salt and Pepper to taste

Place olive oil, diced onion, and garlic in skillet and sauté for 2-3 minutes until onions are translucent.  Add tomatoes and sausage and simmer for 5 minutes. Add shrimp, lemon juice and fresh parsley and simmer until shrimp are pink approximately 2-3 minutes.  Serve over grits.  Serves 4. 

*If you love spicy food, add 1 teaspoon cayenne pepper.
