13-Minute Meals: Chicken Burritos with Corn Salsa

4 chicken breasts cooked and shredded
1 cup cooked rice
1 cup diced tomatoes
½ cup diced purple onion
½ cup chopped fresh cilantro
1 teaspoon chopped jalapeño
1 cup salsa
4 tortillas

Combine all ingredients and place equally in four tortillas and roll. Sprinkle with cheese.  Bake at 325 until cheese is melted.

Corn Salsa

4 cups corn
½ cup diced onion
3 tomatoes diced
1 cup chopped cilantro
1 cup black beans
2 tablespoons lime zest
1 tablespoons lime juice
Salt and pepper to taste

Combine all indgredients.
