13-Minute Meals: Tilapia with mango salsa

Mango Salsa

1 ½ cups diced mango

1/3 cup green onion

1 teaspoon garlic

1 tablespoon cilantro

1 tablespoon lime juice

Zest of one lime

¼ cup dried cranberries

¼ cup chopped yellow pepper

1 tablespoon rice wine vinegar

2 teaspoons minced ginger

1 tablespoon diced jalapeno (optional)

Salt and pepper to taste

Combine all ingredients.  Best served at room temperature or warm.

Fiesta Rice

2 cups water or stock

1 cup rice

¼ cup diced celery

¼ diced carrot

1 teaspoon chopped garlic

1 teaspoon lime zest

Place all ingredients in skillet and bring to a boil, cover and simmer until rice is cooked approximately 12 minutes.

Tilapia

4 Tilapia Filets

1 teaspoon paprika

2 tablespoon lime juice

Salt and Pepper

Sprinkle Tilapia with paprika, lemon juice and salt and pepper.  Bake approximately 7 minutes.
