8 uncooked shrimp peeled, tails off 1/2 cup sliced red peppers 1/2 cup sliced orange pepper 1/2 cup diced celery 1/3 cup chopped green onion 1/3 cup red cabbage 1 cup snow peas 1 tablespoon olive oil 2 teaspoons sesame oil 1 teaspoon rice vinegar 2 tablespoons sweet chili sauce Salt and pepper to taste Udon Noodles
Place olive oil, rice vinegar, sesame oil and sweet chili sauce in wok or skillet. Add vegetables and sauté for 2-3 minutes. Add shrimp and cook until light pink approximately 3-4 minutes. In a small saucepan bring water to boil and add 8 ounces of udon noodles and cook for 4 minutes until soft.
