13-Minute Meals: Quick and Easy Gazpacho

Ingredients:

2 cups tomato juice

5 medium tomatoes finely chopped

1 cup chopped cucumber

½ cup finely chopped onion

¼ cup olive oil

½ cup cider vinegar

2 tsp. sugar

2 garlic clove, minced

½ teaspoon salt

½ teaspoon pepper

In a large bowl combine all the above ingredients.  This is a great recipe to make the day before and refrigerate for several hours.  Make it "fun" and serve in mason jars.
