13-Minute Meals with Chef Suzanne: Vegetables & Grilled Chicken

As featured on the Noon Show, Feb. 18, 2013. Recipe by Chef Suzanne.

1 cup artichokes chopped

1 cup sugar snap peas

1 cup diced orange or red pepper

½ cup sundried tomatoes

½ cup Greek olives

1 tablespoon chopped garlic

1 tablespoon olive oil

¼ cup white wine

¼ cup feta

Place olive oil, garlic, wine, salt and pepper in pan and sauté for 2 minutes.  Add vegetables and sauté for 5 minutes.  Place chicken on grill for approximately 5 minutes a side or until temperature reaches 160.  Let rest before slicing, chicken will continue to cook will resting.  Plate over vegetables and top with feta.
