Blackened Fish Tacos

4 Tilapia Filets
3 Tablespoons Blackened Seasoning Mix
Shredded Cheese
Flour or Corn Tortillas

Tomato Salsa:

3 Tomatoes Diced
3 Tomatillos Diced
1 Cup White Onions Diced
1 Cup Corn
¼ Cup Cilantro
1 Fresh Jalapeno Diced and Seeded (optional)
Zest of Two Limes and Juice of Two Limes
Salt and Pepper to Taste

Fiesta Sauce

3 Cups Sour Cream
1 Cup Cilantro
Juice and Zest of One Lime
Salt and Pepper to Taste

Dredge tilapia filets in seasoning mix and sauté until done, approximately 7 minutes.

Top with fresh tomato salsa, fiesta sauce, and shredded cheese.
