This Cara Cara Cabbage Salad with Skewered Shrimp is a delicious wintery salad. These Cara Cara oranges are available from December to April.

Cara Cara Cabbage Salad with Skewered Shrimp

Ingredients
1 1/2 Pounds Large Shrimp, peeled and deveined
1 Each Juice of Cara Cara Orange, and zest
1/4 Cup Olive Oil, plus 1 tbsp, divided
Salt and Freshly Ground Pepper, to taste
1/2 Cabbage, large, thinly sliced
1/4 Cup Parmesan Cheese, grated
1/4 Cup Almonds, toasted and coarsely chopped
1 Lemon, juiced
1 Teaspoon Smoked Paprika
1 Cara Cara Orange, peeled, segmented, then sliced in half

Instruction
1 Skewer shrimp and place in glass baking dish. Mix together Cara Cara orange juice, zest, 1
tbsp. olive oil, salt and pepper. Pour over skewers. Cover and refrigerate for 20 minutes.
2 Preheat oven to broil.
3 In a large bowl, mix together cabbage, parmesan and almonds.
4 In a separate bowl, mix 1/4 cup olive oil, lemon juice, pepper and smoked paprika.
5 Remove shrimp from marinade. Broil on sheet pan until no longer pink.
6 Add Cara Cara orange segments to cabbage mixture. Toss with dressing. Serve with
skewered shrimp.

Salmon with Cara Cara Salsa

Ingredients
4 Salmon Fillets, about 4-6 oz. each
3 Each Cara Cara Oranges, two zested and juiced; one peeled, segmented and diced
1 Clove Garlic, minced
1 Tablespoon Olive Oil
2 Cups Cherry Tomatoes, diced
1 Tablespoon Onion, finely diced
1 Teaspoon Jalapeno Pepper, minced
4 Tablespoons Cilantro, chopped
1 Teaspoon Fresh Lemon Juice
Salt and Freshly Ground Pepper, to taste

Instruction
1 Place salmon fillets in shallow baking dish.
Combine orange zest and juice, garlic and olive oil in bowl. Reserve 1/4 cup marinade for
broiling. Pour remaining mixture over salmon. Place in refrigerator and let marinate for 30
minutes.
2 Meanwhile, combine salsa ingredients: Cara Cara orange segments, cherry tomatoes,
onion, jalapeno, lemon juice, cilantro, salt and pepper. Set aside.
3 Preheat oven to broil. Remove salmon from marinade. Place on lipped sheet pan. Pour
reserved marinade over top. Broil for 10-12 minutes; until salmon easily flakes with a fork.
4 To serve top with Cara Cara salsa.
