Summertime Meals
Summer means easy, delicious recipes. How about a delicious grilled chicken salad or these easy to make chicken sloppy joes. Leigh Ann shows how easy and fun these recipes are to prepare!Elegant enough for tea sandwiches, versatile enough for a kid's lunchbox. The secret's the tarragon and the grilled chicken.
2 Bags Tyson Grilled Chicken Breast Strips (10 oz.)
1/2 Cup Mayonnaise
2 Teaspoons Fresh Tarragon, chopped
4 Each Green Onions, chopped
1 Cup Red Seedless Grapes, halved
1 Teaspoon Lemon Juice, fresh
1 Cup Celery, chopped
Freshly Ground Black Pepper
Cashew Halves, for garnish
Mix mayonnaise, tarragon, green onions, grapes, lemon juice, celery and pepper together; mix well. Add chicken and toss. Top with cashews. Serve in lettuce cups, on ciabatta bread,
or in the center of a whole tomato cut into wedges.
Combine the sesame oil, rice wine vinegar, sugar, salt, mint, basil, crushed red pepper
flakes and lime juice in a small bowl; mix well.
In a large bowl, combine lettuce & peppers. Add dressing, toss. Add grilled chicken strips
and lightly toss again. Serve.
1 Tablespoon Oil
1 Tablespoon Brown Sugar
1/2 Teaspoon Dry Mustard
1 Cup Ketchup
1 Tablespoon Worcestershire Sauce
1 Tablespoon Apple Cider Vinegar
1 Bag Tyson Grilled Chicken Breast Strips (22 oz.)
6 Kaiser Rolls
1 Cup Coleslaw
In a saucepan, add oil, brown sugar, mustard, ketchup, Worcestershire sauce and vinegar.
Heat for 3-5 minutes. Add frozen chicken; combine. Cover and heat throughout, another 3-5
minutes.
Spoon 1/2 cup chicken mixture onto bottom half of each bun. Top with coleslaw, dividing
evenly. Cover each with top of bun.
