You Won’t Believe It’s Cauliflower Pizza Crust

1 cup cooked, grated cauliflower (after cauliflower is cooked and slightly cooled, shred cauliflower with a cheese grater or potato ricer)
1 egg
1 cup part-skim mozzarella cheese, shredded
½ tsp dried fennel
1 tsp dried oregano
2 tsp dried parsley
Pizza toppings: mushrooms, onions, diced peppers, shredded mozzarella cheese or anything else you like

Preheat oven to 450 degrees. Spray a cookie sheet with non-stick cooking spray. Combine grated cauliflower, egg and mozzarella. Press evenly on the pan. Sprinkle with fennel, oregano and parsley. Bake for 12-15 minutes. Remove from the oven.

Top with your favorite toppings. Place under a broiler at high heat until cheese is melted. Serves 8.
