Morton’s Shrimp Alexander
4 ounces of butter or margarine
Prepared breadcrumbs (recipe mix follows)
12 large shrimp

Melt butter in a small saucepan. The butter should be warm, not hot. Dip cleaned shrimp in warm butter one at a time. Let excess butter drain off, then roll the shrimp in the prepared breadcrumbs. Place the breaded shrimp on a baking sheet vein side down with the tail curled up. Place the baking sheet into a 500-degree oven for approximately 4-5 minutes, until golden brown.

2 cups of plain breadcrumbs
2 teaspoons finely minced shallots
2 teaspoons chopped parsley
1-1/2 tablespoons of chopped fresh garlic
Salt and pepper to taste

Mince shallots, chop garlic and parsley. In a mixing bowl, combine ingredients with the breadcrumbs. Be careful not to leave lumps. Add salt and pepper to taste.
