Broccoli Salad by the Casserole Queens
Recipe by the Casserole Queens
6 cups fresh broccoli florets, chopped
8 slices bacon, cooked and crumbled
3 green onions, green parts only, chopped
½ cup dried cranberries or raisins
½ cup chopped pecans
1 cup mayonnaise
2 tablespoons cider vinegar
½ cup sugar
1) In a large bowl, combine the broccoli, bacon, green onions, cranberries, and pecans.
2) In a separate bowl, combine the mayonnaise, vinegar, and sugar to make a dressing. Pour the dressing over the broccoli mixture and toss well. Serve room temperature or cold.
*This dish can be made diabetic-friendly by substituting a sugar substitute like stevia for the sugar. Take a look at the guidelines on the sweetener package to know how much to put in the salad, since something like Splenda is much sweeter than sugar.
