13-Minute Meals: Zesty Shrimp over Shaved Fennel Slaw

1 cup sliced fennel bulb (about 1 small)

¾ cup thinly sliced red bell pepper

¼ cup vertically sliced red onion

2 teaspoons coarse-grain Dijon mustard

2 teaspoons olive oil

2 teaspoons fresh lime juice

Zest on ½ lime

¼ teaspoon ground black pepper

1/8 teaspoon salt

1/8 teaspoon sugar


8 cooked shrimp

1 teaspoon olive oil

1/8 teaspoon salt

1/8 teaspoon ground red pepper

1 tablespoon fresh mint

1 teaspoon lime zest


Prepare slaw combining slaw ingredients.  Cover and refrigerate.  The slaw can be made a day ahead.  Combine shrimp ingredients and toss well.  Serve over fennel slaw. 


*You may also use raw shrimp and place in pan with first 3 ingredients.  Cook 2 minutes on each side or until done. Serve warm.
