13-Minute Meals: Tri Color Tortellini Pasta

¼ cup diced tri color peppers
1 cup diced mushrooms
2 cups diced chicken sausage
1 cup diced tomatoes
1 cup fresh spinach
¼ fresh parmesan cheese
1 cup chicken stock
1 cup cream
1 tablespoon chopped garlic
3 cups cooked tri colored tortellini

Place chicken stock, garlic and pinch of salt and pepper in skillet and bring to a light boil.  Sautee peppers, mushrooms, tomatoes for 3 minutes until soft.  Add chicken sausage and sauté one minute.  Add cream and parmesan cheese and heat through approximately 2 minutes.  Add fresh spinach and cooked tortellini.  Combine and heat 2 minutes.  Serve with warm bread and a salad!  Serves 4.
