13-Minute Meals: Tilapia Veracruz



4 tilapia filets
¼ cup olive oil
2 teaspoons garlic
2 tablespoons lime juice
1 teaspoon lime zest
1 tablespoon chopped cilantro
½ cup black olives sliced
½ cup capers drained
½ cup artichokes
¼ cup chopped green bell pepper
1 cup fire roasted tomatoes
¼ teaspoon white pepper

Place olive oil in skillet and add onions, green peppers and garlic.  Sautee until onions are translucent about 3 minutes.  Add lime juice, black olives, capers, artichokes, tomatoes, cilantro and white pepper.  Place tilapia filets in mixture, cover and simmer 10 minutes or until fish reaches a temperature of 145.  Top with additional cilantro and serve.
