13-Minute Meals: Salmon wraps

2- 6 oz. salmon filets

2 cups cucumber seeded and diced

½ cup chopped green onions

1 cup diced yellow, orange or red pepper

1 cup diced tomato

1 cup shredded lettuce or spinach

Zest of 1 lemon

2 teaspoons lemon juice

1 tablespoon fresh dill

¼ cup toasted almonds

1 tablespoon honey

4 wraps

Salt and pepper to taste

Place salmon on cookie sheet, sprinkle with salt and pepper and a drizzle of olive oil and fresh lemon juice.  Bake in 375 oven to internal temperature of 145.  Remove from oven and let cool slightly.  Combine with salsa and wrap it up!
