13-Minute Meals: Refrigerator pasta with salmon
Recipe by Chef Suzanne. As seen on the Noon Show, Monday, April 8, 2013.
1 cup diced yellow squash
1 cup diced yellow zucchini
½ cup diced onion
1 tablespoon roasted or chopped garlic
¼ cup chopped basil
¼ cup olive oil
Salt and pepper to taste
¼ cups feta
3 cups cooked pasta
Salmon: Drizzle olive oil, sprinkle with salt and pepper and lemon juice
Dice and toss all ingredients. Bake salmon at 325 for 7 minutes. May serve pasta warm or cold.
