13-Minute Meals: Penne Mediterranean


Penne Mediterranean

1 cup diced tomatoes

¼ cup white wine

½ cup pesto

1 cup fresh spinach

½ cup diced peppers

¼ cup olive oil

¼ cup feta cheese

1 tablespoon chopped garlic

1 cup diced artichokes

¼ cup green onions

Place olive oil, diced tomatoes, peppers, onions,  wine and artichokes in skillet and sauté for 5 minutes.  Add pesto and fresh spinach mix until spinach is blended approximately 2 minutes.  Place over cooked penne pasta.
