13-Minute Meals: Lemon and Herb Baked Salmon Over Quinoa Pilaf

4 Salmon Filets (6-8 oz)

Juice and Zest of 1 lemon

½ tablespoon olive oil

1 teaspoon butter

1 tablespoon fresh parsley

½ tablespoon fresh tarragon

Quinoa Pilaf

Cook quinoa according to package directions

½ cup diced celery

½ cup diced carrot

¼ cup diced onion

1 teaspoon lemon zest

1 tablespoon capers

Place salmon filets on a baking sheet.  Mix remaining ingredients in bowl and brush on salmon.   Place salmon in a 350 degree oven for approximately 10 minutes until salmon reaches an internal temperature of 140. 

Cook quinoa according to package directions.  While quinoa is cooking add vegetables to a skillet and sauté 5 minutes or until soft.  Add cooked vegetables, capers and lemon zest to quinoa when it is finished cooking.  Cover with pot lid for 1 minute. Place on platter and place salmon over.
