13-Minute Meals: Chicken breasts with avocado, tomato and cucumber salsa



Cooking Spray

¾ teaspoon salt; divided

¼ teaspoon chipotle chile powder

4 (6-oz) skinless, boneless chicken breasts halves

1 ¼ cups coarsely chopped cucumber seeded and pealed

1 cup grape tomatoes, halved

½ chopped red onion

½ cup chopped avocado

2 tablespoons fresh cilantro chopped

2 teaspoons fresh lime juice

Zest of 1 lime

1 jalapeno pepper, seeded and finely chopped

Heat a grill pan over medium high heat. Coat pan with cooking spray. Spinrle ½ teaspoon salt and chile powder evenly over chicken and grill. Cook 5 minutes on each side or until done.

Combine remaining ¼ teaspoon salt, cucumber, and remaining ingredients in a medium bowl, tossing well. Serve with chicken.
